I have bought 60mm V-Slot Gantry plates but now only seem to find 20mm or 80mm plates. Is it a case that there are none made now and we have just a Universal plate?

I use a 6020 as the X axis on largish Cartesian 3D printers as it allows the belt to run in the 2 cavities and the V-Slot rollers top and bottom... generally over kill from engineering pov but works out quite neat.

Trying to use the 80mm Universal plate is a pain as I have an extra 13mm below where the plate normally stops.

Is this a case that there is just non anywhere and they will be stocked or are they now never to be made again?

Those must have been an extremely limited production run as I don't recall them even existing. @Mark Carew would probably be the only one who could answer your question.

Funny thing is I have bought 3 of them over maybe 6 months.

... an after thought... I am in Oz and they may or may not be genuine... I bought them from MakerStore in Melbourne.

Correct, we do have plans for creating a plate line for the V-Slot series different sizes, much like the OpenRail plates series. We have not to date made these so they are not genuine OpenBuilds Part.
Thank you for the feedback on needing these plates we will look into having them available for the community.

    No problems.

I think generally a Universal plate will work but my situation is just one of those cases the orientation and any over hang of a plate might (and in my case does) interfere with other parts.
