Does anyone know what would be the center-to-center distance between two metal v-wheels riding on a 2020 extrusion? Also, would it be prudent to use these on Alu extrusions?

The center distance is whatever you want it to be.
Those wheels would eat ally extrusions for breakfast I would think.

I meant the center-to-center distance when they are riding on the opposite sides of the extrusions. For e.g. the center distance between one on the top and one on the bottom of the 2020 extrusion.

Metal V-wheels should never be used on aluminum extrusion as they wear down the aluminum. For the regular Delrin V-wheels though the answer would be section depth + 20mm or in this case of a 20mm deep section the answer would be 20 + 20 = 40mm.
