I am trying to Saracen my spoilboards on the lead 1515 machine I'm pretty new and really don't have an idea. I was going to use easel and cut like normal at 0.2 depth with a 1.25 end mill bit, but was unsure of how to set the cut width and length. Will there be edges that won't be touched? Is there any videos?

If you are using the Openbuilds controller software, there is a surfacing wizard right there.

OpenBuilds CONTROL (from software.penbuilds.com) > Wizards and Tools menu > Surfacing Wizard

If your spoilboard is larger than your cutting area, there will be edges that are not reached. I intentionally do this on the Y axis so I always have a nice straight edge to line up work stock.
