I've been wanting to make a knife like this since I got the CNC, but I knew I needed to learn a lot and practice before I got to it. I used Fusion 360 to model it, and also to program the CAM. I used a single flute 1/8" end mill, but I wish I would have used a 1/4" single flute instead I just didn't have one (buying now... opening amazon) I found an old bike brake router though-bolt in the shop which got the hamsters turning in my head. I love that the blade holder doesn't contact threads of a bolt, it rides smoothly on the though-bolt shaft.
