Can anyone tell me where I can find eccentric nuts to fit a plate hole larger than 7mm. 7mm is all I can find, but I need more adjustment than that will allow.

    Cheers.

Not sure if you can get bigger eccentric nuts but I’d try taking them all back to open then repeating the tightening process little by little so you might get all the wheels to touch, you should just be able to turn them with one finger.
If that doesn’t work you could try a wrap of tape around it to take up some slack? You may have to do them all this way though

How much extra adjustment do you need?

That's a bit more than I was thinking. I was going to suggest boring out the fixed (5.1mm) holes to 7 mm, then adding more eccentrics. This will only yield about 0.5 to 1mm extra though. Who supplied the plates?

The plates were supplied by RoutaKit. I'm not sure is they're still in business though :/

There is still room to drill a new hole for the same eccentric nuts, but I would rather not put a bunch of holes in the plate.
