I bought a OX cnc kit total size 750mmx750mm with a working area 570x525mm. So finally after a year I got it together and using electronics from Openbuilds. I am ready to level the spoil board and wondering what size bit would be optimal?

That depends to some extent on your router/spindle as well as the rigidity of your machine (which depends on how well you built it).
I use a 20 mm router bit (because they are readily available and cheap - but then so am I) 20~25 mm is a good guess.
