Since I haven't found anything in the menus to reduce the axis travel to 1mm or below, I'm guessing that using the paper method is not an option with the interface. If I'm starting with a VBit, I guess I have to load an endmill first to establish X0,Y0, then the VBit for Z0 (using the XYZ touch plate. Is that everyone's workflow, or am I missing something obvious?

Use the Jog Speed buttons to dial down the speed, which in turn adjusts how far it moves in the same timeframe :)

At 1% you can make really really tiny moves :)

I use a lathe turned brass rod to probe X and Y, then change to the bit to probe Z. I use a lot of straight flute bits and you can't probe X AND Y accurately with those.

Yes, instead of a kind of select all approach, you as operator can setup toolpaths in any order you need by going at it in the order you need things done. Add relevant entities to their own toolpaths and sort accordingly.

Harder for a file with a lot of details, for those you could look into external path optimisers (at own risk) like https://xyzbots.com/gcode-optimizer/ or a more advanced CAM: docs:software:overview [OpenBuilds Documentation]
